Kyotango Mairingen Distillery (京丹後舞輪源蒸留所)

Mairingen Distillery is a craft gin distillery in Kyotango, Kyoto Prefecture, Japan, set on a mountaintop at about 620 metres in the Tango Peninsula forest. It distils gin from wild-harvested botanicals picked from the surrounding woodland and blends two local waters, a very soft spring water from the summit and a very hard water from the foothills. The distillery also hosts visitors and runs projects with bartenders and other drinks-trade professionals.
