The Ethical Spirits is a Japanese distilling venture focused on circular economy, making gin from materials that would otherwise be discarded, such as spent sake lees, beer, sake and cacao husk. Its signature brand is the Tokyo Ethical Gin "LAST", and it also releases limited-run spirits made with unusual ingredients and recipes. The company runs a Tokyo Riverside Distillery, described as its third urban distillery in Tokyo, established in 2021.
